Pam would like to make sweet potato, black bean, and corn enchiladas with cilantro tofu sauce.  (Inspired by a recipe from the veganomicon...Remember that one, Shotglass?!)  Motivation/sufficient help permitting, I'd also like to bust out a batch each of homemade guacamole and mango black bean salsa. I'm planning on showing up with the roasted pepper sauce pre-made, but I'll still need two or three volunteers for chopping and assembly line action (i'm down with veggie prep/assembly -jwm).


Andrea would like to cook something amazing for dessert. She would love some help in doing so =)  Will probably happen during lunch hours.
